Greek Hummus & Pesto Pizza



From the bottom to the top:
  • whole wheat pita
  • hummus
  • pesto
  • low fat feta
  • roasted red peppers
  • red onions, thinly sliced
  • rotisserie chicken
  • olives
  • drizzle of extra virgin olive oil
  • chopped romaine lettuce, tossed in homemade (or whatever you want) Greek dressing
Bake at 400 for 5-7 minutes. Top with the cold romaine lettuce before serving. I served it last night with a side of pesto parmesan quinoa. Easy and nutritious.

Pizza Flavored Hummus

Such a lame picture, I know.

This creation might make me famous. Oh wait, Tribe already has this product. I saw Tribe Pizza Flavored hummus in the store today for $3.99 and I told Maximus, "dude, I can totally make this." He replied with, "Yeah!" We came home from the store, he went down for a nap and I got to work.

It turned out SO GOOD. It literally tastes like pizza. It's a better craving "fix" than pizza- it's creamy and it won't make you feel like crap after devouring a load of it.

  • can of Chickpeas
  • 1/3 cup tahini
  • 1 lemon
  • roasted red peppers (half jar)
  • 2 garlic cloves
  • salt and pepper
  • a glug of Muir Glenn pizza sauce (haha, this is where I cheated)
  • oregano
  • basil
  • paprika
  • a squirt of tomato paste to bind it a bit
Blitz it all up and let it chill. Try it.

Whole Wheat & Quinoa Flour Pizza Dough

I combined 2 recipes to make this dough. It turned out tasty and I topped the dough with red onions, organic jarred pizza sauce, red onions, spinach and basil leaves, black olives and some chicken I grilled. Easy peasy! And you don't have to feel like lard ass for eating more than 2 pieces.

1 cup of water
2 cups whole wheat flour
1 cup quinoa flour
2 tbsp. vital wheat gluten
1 1/2 tbsp. honey
1 tsp. salt
1 packet of instant yeast
2 tbsp. olive oil


In a large bowl, whisk together the flours, wheat gluten, and salt. In another bowl, combine one cup of warm water, honey, yeast, and olive oil. Let it sit for a second and get foamy, then dump into the dry combination and stir starting from the middle to form batter-like dough, adding more and more from the sides until you can handle it. Knead for 5-10 minutes (although you'll notice immediately if you bake bread often enough that the vital gluten changes the texture of the dough almost immediately) and then let sit in an oiled bowl, covered, for about an hour. Punch down and knead back into a ball until no longer spongy. Let sit for 10 minutes or as long as you want while you prep all your pizza goodies, then roll out.
